The process for selectively obtaining products of reaction between natural fatty acids with di glycerine employs lipases immobilized as catalyst. The esterification can involve such acids as: ladric (dodecanoic) acid, stearic acid (octadecanoic), oleic acid (9-cis-octadecenoic) or ricinoleic acid (12-hydroxy-9-cis-octadecenoic) with di glycerine using as catalyst lipases immobilized in resins of anionic interchange or porous acrylics which give the obtained catalyst a pore diameter of between 50 and 400 angstrom and a specific surface between 10 and 150 m2/gr. The esterification reaction is effected at pressures between atmospheric and 1mm of mercury at a temperature between 20 and 90 degreesC and in the presence or absence of organic solvents.
