PURPOSE: Provided is a food-preserver including polyacrylate compound, which forms a nonpermeable membrane on the surface of a food to prevent oxidation and spoilage of food and to remove harmful heavy metals, thereby maintaining the freshness of food for a ling time. CONSTITUTION: The food-preserver consists of 5-10 wt.% of alpha-amino acid, 3-10 wt.% of sodium polyphosphate, 0.15-0.3 wt.% of C8H7NaO4·H2O and the balance of polyacrylate compound, wherein the polyacrylate compound can be (CH2CHCOONa)n and the alpha amino acid can be glycine(C2H5HO2).
