An apparatus in an infusor (1) for a liquid food product, of the type which includes an autoclave (2) with a conical bottom (3), the autoclave (2) having an inlet (4) for the product located in its upper region, the inlet being disposed to divide the incoming product into the autoclave (2) into small droplets (6), the infusor (1) further including an outlet (10) for the product located in the lower region of the autoclave (2), as well as an inlet (11) for steam, characterized in that the conical bottom (3) of the autoclave (2) is filled for the greater part by a conically shaped body (15), and that the remaining space (16) in the bottom (3) of the autoclave (2) constitutes a buffer cell. 2. The apparatus as claimed in Claim 1, characterized in that the stay volume of the product consists of that product which stays in the space (16) up to a liquid level (19,20) above the upper side (18) of the body (15). 3. The apparatus as claimed in Claim 2, characterized in that the stay volume may be varied in that the liquid level (19,20) may vary between a minimum level (19) and a maximum level (20). 4. The apparatus as claimed in Claim 3, characterized in that the liquid level (19,20) is regulated by means of an outlet valve (30) placed in the product outlet (10); and that the outlet valve (30) is controlled by a differential pressure between the pressure measured by a pressure gauge (24) placed in the product outlet (10) and the pressure measured by a pressure gauge (23) placed above the maximum level (20). 5. The apparatus as claimed in Claim 3, characterized in that the stay volume may be varied in that the conical body (15) may be moved upwards or downwards in the conical bottom (3) of the autoclave (2) by means of a switching device (25). 6. The apparatus as claimed in Claim 2, characterized in that the stay volume may be varied in that the liquid level (19,20) may vary between a minimum level (19) and a maximum level (20) at the same time as the conical body (15) may be moved upwards or downwards in the conical bottom (3) of the autoclave (2) by means of a switching device (25). 7. The apparatus as claimed in any of Claims 2 to 6, characterized in that the upper side (18) of the body (15) is angled from the centre and out towards its periphery. 8. The apparatus as claimed in any of Claims 2 to 6, characterized in that the upper side (18) of the body (15) is provided with an edge (21) along its periphery. 9. The apparatus as claimed in any of the preceding Claims, characterized in that the body (15) is disposed to be kept in position in the conical bottom (3) by means of guide stub shafts (17). 10. The apparatus as claimed in any of the preceding Claims, characterized in that the body (15) has a cone angle α which is greater than the cone angle β of the conical bottom (3). |
