<p>The invention concerns a stable aqueous gluconic acid composition, said acid being in the form of at least a salt and optionally in the form of free acid and/or one, at least, of its lactones. Said composition is characterised in that it has: a pH higher than 4.0, a dry matter content at least equal to 50 %, an ion gluconate content at least equal to 50 %, expressed in total dry weight of gluconate ions, derived from gluconic acid in the form of salt(s) and optionally of free acid and/or lactone(s) relative to the dry matter of said composition, a sodium ion content less than 8 %, expressed in total dry weight relative to the dry weight of said composition, and an efficient content of a stabilising agent selected in the group consisting of saccharides other than gluconic acid, its salts and lactones, amino compounds and any mixtures of at least any two of said products.</p> |
