The assembly, incorporated in a conveyor line for cutting up the carcasses of killed, plucked and eviscerated poultry manually, has a mechanism with vertical cranked rods (5) for dislocating the thigh joints of the birds to facilitate removal. The rods are positioned symmetrically on either side of a conveyor bar (12) with evenly-spaced cones on which the carcasses are impaled. The rods are designed to pass between the thighs and sides of a carcass, pushing the thighs outwards as the rods are rotated through a given angle at the same time as the carcass is immobilized on the conveyor by a mobile shoe (61) pressed against its spine by a pneumatic power cylinder (7).
