PURPOSE: A process of a carbonated onion beverage made by mixing liquefied carbonic acid gas with an onion extract is provided. Whereby, the product is useful as effervescent drinks and has an excellent freshness. CONSTITUTION: Leaves and roots of onion are finely ground and mixed with carbonated water in a ratio of 45% by weight:50% by weight and then 5% by weight of onion flavorings are added thereto.
