PURPOSE: A boiled fish paste and its producing method are provided, therefore the boiled fish paste having various shapes and improved taste can be produced without frying it in oil. CONSTITUTION: The process for producing a boiled fish paste comprises the steps of: mixing 70 to 80 wt.% of fish meat, 10 to 15 wt.% of wheat flour, 3.00 to 4.00 wt.% of oils and fats, 3.00 to 4.00 wt.% of salt, 3.96 to 5.6 wt.% of sugar and 0.04 to 0.4 wt.% of sodium bicarbonate; introducing the mixture into a mold having a certain shape; heating the mold at 300 to 600 deg.C; and removing the boiled fish paste from the mold. The produce boiled fish paste is not oily because the boiled fish paste is not fried in oil during its production process. |
