PROBLEM TO BE SOLVED: To obtain in high yield a soybean material with high embryo content through completely peeling off embryo from soybeans, separating the embryo part from crushed cotyledon with a small particle diameter, which is produced always by crushing soybeans and cannot be removed with a square mesh, and preventing the crushed cotyledon with the small particle diameter from being mixed with the embryo part. SOLUTION: The objective method for producing a soybean material with an embryo content of 35-80 wt.% comprises crushing carefully selected soybeans to half or less in size and separating and concentrating the soybean embryo part with an open-meshed riddle net having 0.5-1.4 mm width and the ratio of length to width of 2 times or more. The soybean material thus obtained is included, and from the soybean material, an oil and fat or a high-isoflavone product, a food containing the oil and fat and a cholesterol-diminishing agent having the oil and fat as the main ingredient are obtained, respectively. |
