PURPOSE: A method and a device for producing fruit wine are provided, therefore high quality of fruit wine having higher alcohol concentration and purity can be cheaply produced. CONSTITUTION: The method for producing the fruit wine comprises the steps of: heating fruit juice to inhibit browning; inserting the fruit juice into a fermentation vessel such as pottery or black oak vessel; inserting a yeast selected from Pokaier, Bordeaux, Burgunder, Portwein, Steinberg and Malaga, salt such as (NH4)2HPO4 and (NH4)2SO4, and other compounds into the fermentation vessel; fermenting the fruit juice mixture under vacuum condition with exhausting gas produced; and circulating the fermentation vessel during fermentation by using a circulating device to facilitate the fermentation and maturation of the fruit juice, in which the fruit is selected from grape, cherry, banana, orange, strawberry, peach, pear, apple, plum, persimmon, melon, tomato, watermelon, cucumber, kiwi, mulberry, wild grape, the fruit of Actinidia arguta, Cornus officinalis SIEB, and Acanthopanacis Cortex.
