The cooking oven comprises a casing (10,14) with a base (10) in which there is a central opening (12). The food to be cooked, for example a pizza (34), is placed on the base over the central opening, inside an upper casing (20) which forms the oven. Cooking is carried out by a microwave source (28) and an infrared source (30) placed above the surface of the pizza. The pizza may be lifted up on a central stand (26) with a support post (24) in order to be brought up to the cooking position, when it is raised off the base of the casing. The system is controlled to achieve the required temperature within the pizza, and a further higher temperature on the top surface of the pizza.
