PURPOSE: Provided is a method for manufacturing kimchi containing gamma-aminobutyric acid, which improves kimchi flavor, reduces blood pressure, develops one's ability to study, and has a stabilizing effect on the nervous system, thereby effectively producing gamma-aminobutyric acid from glutamic acid and manufacturing kimchi containing it. CONSTITUTION: The manufacturing method of kimchi containing gamma-aminobutyric acid is characterized by: adding at least one or two kinds of protein materials selected from the group consisting of egg yolk protein, soybean protein, grain gluten, pulse or grain embryo, and/or their enzyme hydrolysate; additionally adding rice yeast to decompose the protein materials and/or enzyme hydrolysate to provide glutamic acid; and converting a part of the glutamic acid into gamma-aminobutyric acid by using lactic acid bacteria. |
