A bread oven which is loaded with bread presented on several levels by a trolley, is heated by hot air by a flow-regulated blower powered by an electric motor. The blower speed is regulated by a frequency converter which is programmed to a given pre-determined air circulation profile. The oven has a rear wall, two sidewalls, a top and bottom, shelf racks and a front hatch, and is heated by a burner via a heat exchanger. Hot gases are distributed throughout the oven in different passages.
