发明名称 METHOD AND APPARATUS FOR INSPECTION OF TASTE
摘要 PROBLEM TO BE SOLVED: To provide a method and an apparatus wherein the strength of the taste of a substance displaying astringent taste, bitter taste or convergent taste can be grasped precisely and efficiently, without having to rely on a sensory inspection. SOLUTION: From among molecular membranes which respond selectively to the substance displaying the astringent taste, the bitter taste or the convergent taste, the molecular membranes in a plurality, including at least the molecular membranes composed of a lipid having a positive electric charge and the molecular membranes composed of a lipid having a negative electric charge are used; the response of a sample solution having different strengths of the taste is investigated; and parameters by which their response result is related to the strengths of the taste are found. On the basis of the response result of the molecular membranes in plurality with reference to the sample solution and on the basis of the parameters, the strength of the taste of the sample solution is found.
