<p>PROBLEM TO BE SOLVED: To solve a problem that many conventional pickles are generally obtained by a production method of health-conscious type by reduction in salt, pickles made into health foods or pickles of gourmet-conscious type are desired as one of means for increasing people who eat pickles and expansion in sales for people who dislike a pickle smell is also needed. SOLUTION: Momordica grosvenori and licorice are noticed as food materials producing a synergistic effect with a nutrient function component which a vegetable has. A method for pickling a pickle raw material vegetable with Momordica grosvenori and licorice so as to develop the effect of Momordica grosvenori and licorice is applied. As a result, pickles of health-conscious type and pickles of gourmet-conscious type having a high effect on expansion in sales are obtained. Since a smell of pickles is reduced, expansion in sales of pickles to people is made possible.</p> |
