PROBLEM TO BE SOLVED: To provide a method for producing a maltose liquid simplified in process and capable of making the variance in maltose yield smaller as well. SOLUTION: This method for producing a high-purity maltose liquid comprises (1) a liquefying step wherein an aqueous starch solution (substrate) is subjected to a liquefying enzyme to obtain a liquefied product with a dextrose equivalent (DE) of <=10 and (2) a saccharifying step wherein the liquefied product is put to a liquefying enzyme deactivation treatment followed by simultaneous addition of a saccharifying enzyme group including a maltose-forming enzyme and a debranching enzyme together with a liquefying enzyme within such a range as not to inhibit the action of the saccharifying enzyme group to perform a saccharification.
