Production of a trivalent chromium complex compound (I) involves adding lactoferrin or whey protein to at least one of trivalent chromium compound (II) and heating the resulting mixture to form (I). (II) is selected from chromium (III) chloride hexahydrate, chromium (III) chloride, chromium (III) acetate, chromium (III) nitrate, chromium (III) oxide, chromium (III) sulfate or other organic/inorganic trivalent chromium compounds. An Independent claim is included for the production of a trivalent chromium milk product involving the above method and addition of (I) into milk selected from fresh, preserved or concentrated milk, cheese or milk powder of various mammals.
