PURPOSE: Provided are concentration method and apparatus of soybean slurry, and manufacturing method of bean curd with concentrated soybean slurry, thereby reducing manufacturing cost, improving taste and quality of bean curd, and forming bean curd in a desired shape. CONSTITUTION: The concentration method is characterized by inserting soybean slurry into a tank and heating it at low temperature under the vacuum condition. Bean curd is manufactured by adding coagulating agent to the concentrate then forming it in a desired shape. The concentration apparatus consists of; a tank having a heating room; an inlet pipe for inserting soybean slurry to the tank; and an outlet pipe for discharging soybean slurry concentrate.
