摘要 A packaged food product and a method for making a packaged food product and preserving a food product using biological modified atmosphere packaging includes applying a bioactive culture to the food product prior to sealing the food product within a CO2-enriched gas atmosphere. In accordance with the invention, the CO2-enriched gas atmosphere combines with the bioactive cultures to reduce the growth of pathogenic microorganisms. In addition to CO2, other modified-atmosphere-packaging (MAP) gases, such as N2, O2 and Noble gas and mixtures of Nobel gases, can be used in combination with bioactive cultures to reduce the growth pathogenic microorganisms during storage of the food product.
