摘要 PROBLEM TO BE SOLVED: To provide a method for producing soya milk (soya milk drink) and bean curd (including its fabrication product) without producing bean curd refuse which has been mostly discarded. SOLUTION: A soya milk for processing or a soya milk drink is produced by heat-treating a soybean slurry under a high-temperature and high-pressure condition comprising the super-critical condition of water at >=374 deg.C under >=22.1 MPa or a subcritical condition at >=100 deg.C and <374 deg.C under the pressure above the saturated vapor pressure of water at the temperature for 0.1 sec to 60 min. As necessary, the soybean slurry is finely pulverized in wet state by a high-pressure homogenizer, or the like, before or after heating or the pH of the slurry is adjusted to 3-10. Bean curd or its fabrication product can be produced by coagulating the soya milk with a coagulation agent or a gelling agent.
