PROBLEM TO BE SOLVED: To obtain an endo-β-1,3-mannanase easy for production and purification, and also having a high stability, and to provide a method for producing the same. SOLUTION: This endo-β-1,3-mannanase has following physico-chemical properties; it specifically hydrolizesβ-1,3-D-mannoside bond ofβ-1,3;β-1,4-mannan produced by a yeast belonging to the genus Rhodotorula to finally produceβ-1,4-mannobiose; it specifically acts onβ-1,3;β-1,4-mannan, not acts onα- mannan, devil's tongue mannan, gulcomannan, and galactomannan, and does not haveβ-1,3-mannosidase activity; has an optimum pH at 5.0 and is stable within the range of pH 4.0-10.0 under a condition at 30 deg.C for 30 min; and has 52,000±1,000 molecular weight, and a method for producing the endo-β-1,3- mannanase by using the above yeast belonging to the genus Rhodotorula is provided.
