摘要 PROBLEM TO BE SOLVED: To obtain a fermented milk food improved in its flavor and suppressed in uncomfortable smell including e.g. the smell of acetic acid, fermentation smell being, emitting when milk or a milk product is fermented by using mainly Bifidus bacteria or when a fermented food including a fermented product obtained by the fermentation is preserved. SOLUTION: This fermented milk food which is excellent in flavor and is masked in the smell of acetic acid and fermentation smell each derived from Bifidus bacteria is obtained by singly adding sucralose or sucralose and a sugar alcohol at a specific ratio to a fermented product obtained by fermenting milk or a milk product with Bifidus bacteria.
