摘要 PURPOSE: Provided is a manufacturing method for functional soy sauce using grapes The say sauce has improved flavor and either removes or discharges heavy metals in a human body when applied to foods. CONSTITUTION: The manufacturing method of functional soy sauce using grapes comprises the steps of: sterilizing selected grapes at low temperature with distilled water of 55 deg.C, containing about 1% of melted salts; mixing the sterilized grapes with 20-35% of melted salts which are melted at 1000 deg.C; adding distilled water thereto in an appropriate amount then fermenting the mixture for 1 month; and filtering the fermentate.
