PURPOSE: A multi-purpose meat roaster is provided to cook meat in various processes by separately forming an upper plate and a lower plate of a meat roaster. CONSTITUTION: A multi-purpose meat roaster comprises an upper plate(2) and a lower plate(3). The upper plate includes an upper grip(21), many round protrusions(22), an inclined oil drain groove(23), an oil drain hole(24) formed in the lowest portion of the oil drain groove, and a displacement preventing guide(25) formed on the edge of the lower inside portion. The lower plate includes an inclined sill(32) formed on the edge, two lower grips(34) formed outside the inclined sill, a lower plate fixing unit(35) extended from the inclined sill to support the entire roaster, a bottom plate(31) formed in the inclined sill to be lower than the inclined sill and higher than the lower plate fixing unit, and many heat induction grooves(33) formed in the inclined sill to transmit heat to the inside along the edge. In the upper plate, meat is roasted indirectly by the heat transmitted from the bottom plate and the through holes on the side. Meat is cooked tenderly while fat is completely removed. In the lower plate, meat is cooked by steaming. The lower plate reduces cooking time and tenderizes the texture of meat.
