SUSHI MADE BY USING BROWN RICE GERMINATED WITH CHITOSAN SOLUTION AND PREPARING METHOD THEREOF

PURPOSE: Sushi made by sung brown rice germinated with a chitosan solution, and its preparing method are provided, therefore the prepared sushi contains various nutrients being necessary for a human. CONSTITUTION: The sushi contains 10 to 90% of brown rice germinated with a chitosan solution. Its preparation method comprises the steps of: hydrolyzing chitosan having average molecular weight of 200,000 to 600,000 dalton and deacetylation degree of 70% or more with 0.3 to 10% of acetic acid or lactic acid; germinating brown rice with 0.001 to 10% of the chitosan solution; steaming 10 to 90% of the germinated brown rice with polished rice and glutinous rice; and preparing the sushi using the hard-steamed.
