PURPOSE: A gel food using gelatine, treated with NaCl is provided. NaCl is added to the concentrated colloidal solution of the heat dissolved gelatin and gelled at room temperature by treating with heat. Also by lowering the gel intensity of the concentrated gelatin sol and providing a gel having the good gel properties such as smooth feel, proper elasticity and gel strength, the foods we eat every day are added to make the above gel food. CONSTITUTION: The process comprises: a gelling step where 3.5-6.0wt.% (based on the total weight of the gel food) of gelatine is heat dissolved and 0.5-3.5wt.% of NaCl is added to the concentrated colloidal solution of gelatin to make a uniform composition; a food mixing step wherein every day foods such as meat, fish, fruit, seed and vegetable are added with the seasoning to the above gel and mixed; a filling step where the above sol state mixture containing foods is filled into a package displaying its calories; and a sterilizing step to increase its storage period. |
