PURPOSE: Provided is a manufacturing method of Kimchi using root crops, such as yam, radish, carrot and the like, by poring them then inserting Kimchi filling-stuff thereinto. CONSTITUTION: The method of manufacturing Kimchi using root crops comprises poring each root crop on its one side; inserting Kimchi filling-stuff into a pore; filling the pore up with viscous liquid or same kind of a root crop; then packing Kimchi with a PVC(poly vinyl chloride) packing material.
