PURPOSE: A method for producing fish paste containing rice is provided, therefore its chewy taste is improved, and it is suitable for a person sensitive to the wheat flour foods. CONSTITUTION: The method for producing fish paste containing rice comprises the steps of: mixing 50 to 70 wt.% of fresh fish meats, 24 to 42 wt.% of rice, 5.8 to 7.8 wt.% of starch, 0.1 wt.% of potassium sorbic acid and 0.1 wt.% of sodium glutamine; frying the mixture; firstly heating the fried fish paste at 90 to 100 deg.C in a steam heater; secondary heating the fried fish paste at 90 to 100 deg.C in a molding device to remove water; packaging the fried fish paste and sterilizing it at 100 deg.C for 30 minutes; and cooling the fish paste at 15 deg.C for 30 minutes. |
