PROBLEM TO BE SOLVED: To provide a measuring method for measuring the physical damage state of frozen food in a short time to obtain the numeric value of high correlation with functional evaluation. SOLUTION: An NMR measuring apparatus is used for measuring a time constant. A measuring sample is cut out in 4 mm×4 mm in the frozen state, packed in a Teflon (R) tube of 6 mm in inner diameter and 25 mm in length and kept in a sample tube to be used for measurement. A measuring temperature is 25 deg.C, and pulse separation time is measured on two conditions of 1.65 ms and 5 ms to measure the physical damage state highly correlated to functional evaluation.
