PROBLEM TO BE SOLVED: To provide a method for frying a fried bean curd by which the temperature of an oil can accurately be controlled, the control over the high and low speed and strength of a vibration device for a dough can be carried out and oil draining of the fried bean curd after frying is not always required. SOLUTION: A dough 1 is sandwiched between an upper plate 5 and a lower plate 3 respectively perforated with many holes 2 and 4 and hung. An oil bath 11 is partitioned into plural chambers with section walls 12 by temperature from low to high temperatures. A first chamber is a warm water chamber 14. A second chamber 11B, a third chamber 11C and a fourth chamber 11D are oil chambers. The vibration device 10 is installed in the second chamber 11B and the dough 1 is hung, successively dipped in the first chamber 14 to the fourth chamber 11D and vibrated in a state of the lower plate 3 contacting the vibration device 10. |
