PURPOSE: A process of preparing picked Welsh onion having an anticancer activity by salting Allium fistulosum(jjok-pa, Korean native name) with roasted salt and bay salt removed in bittern and then mixing conventional spices. Whereby, the product has excellent preservation stability and can be mass-produced. CONSTITUTION: Allium fistulosum is soaked in 50% saline water and then mixed with spices containing 10.0 parts by weight of liquid type salt-fermented anchovy(myeolchi-aekjeot, Korean native name), 9.7 parts by weight of red pepper, 5.2 parts by weight of garlic, 2.7 parts by weight of ginger, 1.3 parts by weight of roasted whole sesame, 1.5 parts by weight of sugar and 12.0 parts by weight of glutinous rice paste, based on 100 parts by weight of the salted Allium fistulosum. Thereafter, 5 to 8 pieces of the seasoned Allium fistulosum are wound to make a bundle.
