PROBLEM TO BE SOLVED: To provide an oil and fat alternable food additive with oil absorption suppressive ability useful for fried foods and the like, and fried foods reduced in oil absorption owing to the food additive. SOLUTION: This oil and fat alternable food additive with oil absorption suppressive ability comprises hydrophobic fine particles each having an average particle diameter of <=250 μm, also having surface hydrophobicity of JIS K6223, and having oil absorption of <=35 g determined by an oil absorption measuring method, and the other objective fried foods contains the food additive.
