PURPOSE: A process of preparing germinated brown rice by soaking brown rice in an extract of rice straw and rice hulls and then germinating is provided. Whereby, the germinated rice is soft and free from a residual pesticide and has a good taste and a large amount of components helpful health. CONSTITUTION: Brown rice is soaked in an extract of rice straw and rice hulls in a ratio of 8:2 at 30 to 32deg.C for 7 to 8 hr and the extract of rice straw and rice hulls is repeatedly supplied to the brown rice once every 2 hr for 48 hr while maintaining a germination chamber at 30 to 32deg.C to germinate the brown rice to a size of 0.5 to 1mm or less. The germinated brown rice is thereafter dried to a moisture content of 13 to 14%. |
