CHITOSAN-AMINO ACID SALT AND SEASONING COMPOSITION CONTAINING THE SAME

PURPOSE: A seasoning composition obtained by dissolving glutamic acid or aspartic acid in a chitosan suspension and then decomposing with enzyme is provided which is safe to a human body, has excellent heat stability and exhibits better seasoning effect than sodium glutamate. CONSTITUTION: Glutamic acid or aspartic acid is dissolved in a chitosan suspension and then decomposed with enzyme to a polymerization degree of D-glucose amine of chitosan of 2 to 50. For an example, glutamic acid is dissolved in 5% purified chitosan suspension and decomposed with chitosanase(Sigma Co.) at 50deg.C for 10 to 24 hr, followed by removing insoluble impurities to produce an aqueous low molecular weight chitosan-glutamic acid salt.
