1277802 Foodstuffs A BRATLAND 3 Sept 1969 [3 Sept 1968] 43531/69 Heading A2B An emulsion product, comprising a fat emulsified in a low fat milk fraction, wherein the fat consists of at least 25 wt. % non-milk fat and comprises up to 85 wt. % of the product, and the low fat milk fraction has a milk solids non-fat content of 6-12 wt. % and a content of membrane-forming substances higher than that of ordinary skimmed milk, may be made by emulsifying the fat in the milk fraction at 30-100‹C, the milk solids non fat and membrane forming substances contents being adjusted prior to the emulsification. The product may be used as the starting material in the manufacture of cheese. |
