PROBLEM TO BE SOLVED: To provide a retort sterilization device which prevents temperature irregurality between upper and lower parts of trays piled in a plurality of steps in a sterilization process, and prevents the irregurality of temperature in a central part and around it even in the same tray. SOLUTION: The retort sterilization device 30 is provided with a sterilization container 32 which houses trays 34 capable of loading a matter to be sterilized in a plurality of steps, and a hot-water supplying device 40 having a jetting nozzle 35 jetting hot water or cooling water from the outside of each tray 34 toward the inside of the tray 34. A bottom plate 51 of the tray is formed in flat board shape. On a side wall part 52 which stands in the peripheral part of the bottom plate 51 of the tray 34, a discharging hole 56 which discharges hot water or cooling water jetted from the jetting nozzle 35 to the outside of the tray is formed. |
