PURPOSE: An apparatus and a method for automatically extracting raw bean sprouts are provided. The extraction apparatus comprises an extraction tank, a condenser and an ageing tank and the method thereof reduces personnel expenses and increases the production yield. CONSTITUTION: The extraction apparatus comprises: a bean sprouts extraction tank(10) containing an agitating member(80); a heating means for heating bean sprouts at 40 to 60deg.C for 2 to 3 hr; a condenser(30) for storing the extracted vapor; a condensing means for condensing the extracted vapor to a liquid phase; and an ageing tank(50) for ageing the condensed extract at 18 to 25deg.C for 2 to 3 months. |
