Product consisting of pre-cooked colored pasta is obtained using at least one pasta color precursor which is brought into reaction, at elevated temperature, with alkaline compound added for development of coloration. Independent claims are also included for (1) colored pasta, in which color precursor is selected from tocopherols, carotenoids, flavonoids and /or polyphenols; (2) method of coloring pasta dough, comprising bringing its surface into contact with alkaline compound at sufficient temperature and over sufficient period to develop the color; and (3) process of coloring dough for production of pasta, comprising (a) preparation of pre-gelatinized dough, containing at least one color precursor, (b) bringing at least a part of the surface of dough into contact with alkaline compound and (c) heating the dough to sufficient temperature and over sufficient time to produce development of color. |
