PURPOSE: Provided is a method for easily manufacturing japanese apricot wine in a short time, by using a japanese apricot extracted obtained by heat-treating japanese apricots. CONSTITUTION: The manufacturing method of japanese apricot wine comprises by diluting a japanese apricot extract with water to 0.1-5% of solid content then adding 10-40% of sugar thereto; and inoculating yeasts therein for the fermentation, wherein the yeast is Saccharomyces sp.
