A method of packaging cheeses or cheese specialities with a natural bloom rind, by placing in a hermetically sealed container comprising on all or part of its surface a selective permeability material allowing an exchange with the atmosphere which maintains around the cheese an atmosphere comprising 14-20 vol.% O2 and 1-6 vol.% CO2 during the whole period of storage.
