PROBLEM TO BE SOLVED: To obtain a mechanically dried product of a scallop adductor which has a shortened drying time of raw scallop adductor, eliminates occurrence of waste to be a loss and has an enhanced flavor. SOLUTION: Firstly, a raw scallop adductor is boiled to make a muscular fiber readily separable. Then the boiled scallop adductor is rubbed or loaded with stirring, etc., and the muscular fiber is loosened to increase its surface area. The loosened muscular fiber is dried by sun drying or mechanically dried. The loosened muscular fiber has the increased surface area, the scallop adductor can be dried in a short time and has no loss. In the case of producing flavor, the scallop adductor is dried by an far infrared radiation dryer instead of an ordinary mechanical drying. |
