PROBLEM TO BE SOLVED: To obtain an air-containing oil-in-water type composition composed of a mixture of whipped cream such as a Dipmart (R) cream and a taste material, having a highly sterilized state, preservable under refrigeration for a long period, distributable under refrigeration, and causing no component separation and neither loss nor decrease in foaming, and also to provide an easy and efficient production method therefor. SOLUTION: This air-containing oil-in-water type composition composed of a mixture of whipped cream and a taste material is such one as to sustain the sterilization state at 5 deg.C for >=30 days. The method for producing the composition comprises inline-mixing of a sterilized whipped cream with a sterilized taste material followed by packing the resultant composition in a sterilized case and sealing the case. |
