PROBLEM TO BE SOLVED: To search a microorganism capable of efficiently producing a novelβ-mannanase from an inexpensive raw material and establish a method for producing the enzyme by using the microorganism. SOLUTION: Thisβ-mannanase acts on mannan, glucomannan, galactomannan and their oligosaccharides, produces mannoes, mannooligosaccharides, glucomannooligosaccharides and galactomannooligosaccharides by hydrolyzing theirβ-1,4-D-mannopyranosyl bonds, has 8.65 isoelectric point (by electrofocussing electrophoresis), 34 kDa molecular weight (by SDS-polyacrylamide gel electrophoresis) and an N-terminal amino acid sequence expressed by sequence No.1 in the sequence table. Bacillus polymyxa KT551 strain having a potency to produce theβ-mannanase and a method for producing the aforesaidβ-mannanase are provided.
