PROBLEM TO BE SOLVED: To provide a noodle production machine comprising a noodle extrusion section having a cylinder for holding kneaded noodle dough, a piston for pressing noodle dough at the bottom in the cylinder through sliding thereinside and a plurality of small holes through which the pressed noodle dough passes, and a noodle boiling section for receiving and boiling noodles passed through the small holes and formed ribbon-fashion, and capable of efficiently performing operations including charging noodle dough into the cylinder, setting nozzle bodies to the cylinder and cleaning the cylinder. SOLUTION: This noodle production machine is so designed that the cylinder 8 is set up so as to be detachable/replaceable from the noodle extrusion section 2. |
