PROBLEM TO BE SOLVED: To provide a new method for manufacturing a cyclic structure- containing glucan having excellent properties higher in solubility in water when compared with a known starch, low in the viscosity of a solution prepared by dissolving the glucan, free from the aging which is observed in a common starch and useful as an alternative substance to starch. SOLUTION: An α-glucan is cyclized by using an enzyme which cuts an α-1,4-glucoside bond and forms a new α-1,4-glucoside bond by a transfer reaction, and can not use glucose as a receptor of the transfer reaction. |
