PURPOSE: Provided is polyphenol oxidase activity inhibitor containing rhubarb which uses natural rhubarb extract to inhibit polyphenol oxidase activity effectively so that it helps to preserve environment. CONSTITUTION: The polyphenol oxidase activity inhibitor containing rhubarb is characterized by including 0.001-10wt% of concentrated and powdered rhubarb extract which comprises 0.001-10g of oxalic acid per 100g of rhubarb extract. In addition, more than one browning-preventing agents selected from ascorbic acid, sodium polyphosphate, citric acid, L-cysteine, kojic acid and calcium chloride are mixed to improve browning-prevention effect.
