PROBLEM TO BE SOLVED: To obtain a lysozyme having the optimum pH of antimicrobial activity in the vicinity of pH 6 and to provide its use as an antimicrobial agent. SOLUTION: This lysozyme contains an amino group which is modified with 1,5-D-anhydrofructose or a sugar chain containing 1,5-D-anhydrofructose as a constituent saccharide. The lysozyme is used as an antimicrobial agent.
