A process for brewing or producing a beer includes obtaining a wort from a grain mash comprising grain which includes peroxidase, the wort thus including peroxidase extracted from the grain in the mash. The wort is maintained at a temperature of no greater than 65 DEG C, and then fermented, at a temperature no greater than 25 DEG C, to obtain a beer which includes peroxidase.
