PURPOSE: A process of preparing a seasoned watermelon by adding sugar and citric acid to a finely cut watermelon and then freezing is provided. Whereby, the frozen watermelon has excellent freshness and a high sugar content as compared to common watermelon and is not interior in a chewing taste to common watermelon newly brought to market. CONSTITUTION: A sliced watermelon is seasoned with 10 to 12% by weight of sugar and added with 0.005% or less by weight of citric acid. The seasoned watermelon is subjected to quick freezing. For an example, 100g sugar and 0.002% by weight of citric acid are added to watermelon and subjected to quick freezing. In comparison with common watermelon newly brought to market after storing for 10 days, the seasoned watermelon is superior to the common watermelon in fresh taste, sweet taste and chewing taste.
