SOLUTION: In a method of manufacturing the optical fiber sensor coil forming an annular light propagation path by winding a polarization face-holding single mode optical fiber, onto the cylindrical winding member made of aluminum as a material having superior workability and vibration-proof and impact proof characteristic, flanges 11 are formed on both ends of the aluminum cylindrical winding member 13, a slit 16 including the flanges 11 at both ends is axially formed, an optical fiber 14 is wound in a state of holding a winding block 17 in the slit 16 of the winding member 13, and the winding block 17 is removed after the completion of the winding of the optical fiber 14 to elastically restore the winding member 13.
