PROBLEM TO BE SOLVED: To provide an agitating apparatus capable of making an efficient agitation and freezing without raising centrifugal force and without producing any stagnant region, easy to change and regulate the revolution ratio for an inner cylinder and an agitating member, and also enabling various frozen desserts differing in texture from each other to be easily produced. SOLUTION: This agitating apparatus has such a construction that a revolvable agitating inner cylinder 10 is set up inside a chilling cylinder 1, a plurality of circulatory ports 14 are arranged circumferentially at intervals within a necessary range in the axial direction of the inner cylinder 10, a scraper 15 in sliding contact with the inner circumferential surface of the cylinder close to the rear side of the rotational direction of the circulatory ports 14, and an agitating member 20 of helical blade structure to be rotationally driven by a driving means 9 different from that for the inner cylinder is set up inside the inner cylinder 10 in such a way that the agitating member 20 and the inner cylinder 10 are revolved oppositely to each other and the transport direction inside the inner cylinder 10 resulting from the revolution of the agitating member 20 is opposite to that resulting from the transport pressure outside the inner cylinder 10.
